Ingredients
400 g Ground beef (80/20)
4 piece American cheese slices
2 piece Brioche buns
3 tbsp Mayonnaise
1 tbsp Ketchup
6 piece Pickles
0.5 piece Onion
1 to taste Salt and pepper
Instructions
Divide beef into 4 loose balls (100g each). Do not overwork the meat.
Heat a cast iron skillet or griddle over very high heat until smoking.
Place beef balls on the hot surface and immediately smash flat with a spatula. Season with salt and pepper.
Cook 2 minutes until edges are deeply caramelised. Flip, add cheese, and cook 1 more minute.
Mix mayo and ketchup for special sauce. Toast the buns.
Build: sauce on bottom bun, pickles, onion, two patties, top bun. Serve immediately.
